It's so simple
Vegetable Stew
2 onions and 6-7 cloves of garlic chopped and sautéed in olive oil
1 Butternut squash chopped into two inch pieces
1 potato chopped into one inch pieces
1 can of stewed tomatoes with liquid
1 green and 1 red pepper chopped into bite size chunks
1 can of chicken or vegetable broth
Layer chopped ingredients into a sauce pot and let simmer till squash and potato
are soft .
Serve with bread or roll of your choice, grated parmesan a tasty option over the stew.
Serves 4 people
